One of Japan's best breweries with hard water: Iwase Sake Brewery is located near the coast, so the groundwater used to make sake flows through the strata of shells. In other words, it is one of the hardest waters in Japan, containing a lot of minerals. This water is used for sake brewing.
This hardness is extremely important for sake brewing; the higher the hardness, the more fermentation power the yeast has, and the easier it is to produce crisp sake with a high alcohol content.
- Connections with overseas
In September 1609, the sailing ship San Francisco, carrying 373 people including Don Rodrigo, who had completed his duties as provisional governor of the Spanish Philippines, was en route to Mexico (then Spanish territory) when it encountered a storm. , ran aground off the coast of Onjuku. When the people of Onjuku saw this, they rescued the refugees from a foreign country they had never seen before, and devotedly cared for them, marking the beginning of exchanges between Japan and Mexico.
